This is one of the fastest ways to make a flavorful dish for the crew. This soup is healthy, light, and filling. It is Always fun to dress it up with your favorite toppings! I made homemade tortilla strips, added spice with jalapenos, and coolness with sour cream and avocado.

Tortilla Strips
Add everything to the instant pot or crock pot and stir well.
Cook soup for 1-3 hours depending on your cooking vessel.
Remove the cooked chicken from the pot and shred with 2 forks.
Heat the vegetable oil in skillet. When oil reaches 350 F. add strips and fry until crispy. Season with salt when they come out of the oil. Drain on a paper towel.
Serve soup with chicken added last
