A comforting and hearty ham and potato soup that's perfect for any meal. The soup includes diced ham, russet potatoes, and a variety of vegetables, simmered to perfection with rich seasonings and finished off with creamy ingredients for a satisfying bowl every time. Garnish it with cheese, chives, sour cream, and crispy ham bits for an added flavor boost.

1. In a heavy bottom pot over medium heat, add butter and melt it down. 2. Brown the diced ham for 3-4 minutes and remove from the pan. 3. Add ham shank, diced peppers, onions, celery, and carrots into the pot. Stir and cook for 3-4 minutes until softened. 4. Add chopped potatoes, water, Better than bouillon, seasonings, and bay leaf into the pot. Stir gently to mix. 5. Cover and let simmer until the potatoes are fork tender. 6. Remove ham shank from pot and set aside. 7. Use a potato masher to mash some of the potatoes to thicken the soup. 8. Add Half & Half and sour cream to the pot and let the soup simmer for another 5-10 minutes until it reaches your preferred consistency. 9. Dice any ham off of the shank and add it along with the browned ham back into the soup. 10. Serve the soup loaded with cheese, chives, sour cream, and crispy ham bits if desired.
