1: Take your cut and cleaned chicken and place it in a bowl. 2: Season your chicken with the spices listed above. Save half of the spices for the flour mixture. 3: In a paper bag, plastic bag or a bowl, add your flour and some seasoning. 4: Add your seasoned chicken to the flour and shake up until the chicken is fully coated. Set aside. 5: In a cast iron skillet, add your Crisco. Let that heat up to 355° F. 6: Once your oil is hot, add in your drumsticks and chicken thighs skin side down. Cover with foil and seal the edges. 7: After about 7 minutes, flip your chicken and cook the other side. 8: Remove the foil once you flip your chicken to avoid moisture making your chicken skin soggy. 9: Use a thermometer to check the internal temperature of your thigh. Once it reaches 165° F, you can remove your chicken. 10: If your chicken is getting too dark too fast, turn down your oil heat. 11: Remove your chicken from the skillet and place on a wire rack to drain and season with more seasoning. 12: Wait till it's cooled a little bit.
