A traditional Thanksgiving giblet gravy, often made with roasted turkey giblets, vegetables, and a rich stock. Adjust the ingredients to your preference for a delicious holiday side dish.

1. Use the roasted vegetables and giblets from the turkey preparation. 2. Melt ½ stick of butter in a skillet over medium-low heat. 3. Add ¼ cup flour to the melted butter, stirring constantly to make a roux. 4. Gradually add 3 cups of chicken broth/stock/drippings to the roux while stirring continuously to avoid lumps. 5. Season with salt and pepper to taste. 6. Stir in 2 teaspoons of Worcestershire sauce. 7. Add a diced stalk of celery and ½ small diced onion to the mixture. 8. Cook the gravy on medium-low heat until thickened, stirring periodically. 9. Once thickened, keep the gravy on very low heat until ready to serve.
