1: Season your roast with olive oil, salt, pepper, and ground mustard. 2: In a Dutch oven set to medium-high heat, add butter and let it melt. 3: Add the chuck roast and sear on both sides, then remove it from the pot. 4: In the same pot, add celery, onions, and carrots. Season with the seasonings listed and sauté for 2 to 3 minutes. 5: Add sliced mushrooms and gently stir. 6: Once the vegetables are sautéed, add beef broth, vegetable base, and Worcestershire sauce.
