1: Cook your bacon on medium heat until brown and crispy. Set aside and drain any excess fat. 2: In the same skillet, add butter and saute your mushrooms until most of the water has been removed and they are tender. 3: While you're cooking your bacon and mushrooms, cook your rice. 4: Mix together your rice, cooked bacon, sauteed mushrooms, and cheese. 5: Add your chicken breast to a lined baking sheet and split each chicken breast down the middle but not through the other side. 6: Add your stuffing mix to the middle of the chicken breast, with some possibly on top. 7: Bake your chicken in the oven at 375° F for 32-40 minutes until the internal temperature has reached 165° F. 8: Once the chicken is completely cooked through, remove it from the oven and serve it with your favorite vegetable.
