1: In a large pot on medium high heat, add half of the olive oil. 2: Heat and then add in your sliced sausage, brown until slightly caramelized, then remove from the pot. 3: Add the rest of the extra virgin olive oil to the pot. 4: Add in all of your vegetables, sauté for a few minutes until translucent. 5: Add in all of your seasonings and sauté for 1 to 2 more minutes. 6: Add in your soaked beans, sausage, liquids, and bay leaf. 7: Cover and let simmer for 45 minutes to 1 hour. 8: At the 45 minute mark, check the tenderness of the beans. 9: Once your beans are tender, add in your butter. 10: Let the butter melt down for creamy beans, then let sit for about 5 minutes before serving with your rice.
