1: Start by cooking your macaroni noodles. Make sure that you salt the water. 2: Once they are done, set them aside. 3: While your noodles are cooking, start on your sauce. 4: To a saucepan set to medium heat, add butter. 5: Once your butter is melted and bubbly, add in your flour and whisk. 6: Keeping the fire at medium heat, add your seasonings while you're whisking your flour. 7: Once your flour starts to bubble, start adding your milk in half cup increments, whisking after each addition. 8: Once all of your milk is added, keep your heat at medium for 1 to 2 minutes. 9: Add your yolk to a separate bowl and add a small amount of the warm milk mixture to that bowl. 10: Whisk your egg yolk with some of the milk mixture until it is smooth. 11: Add your egg yolk to the rest of the milk base and whisk until fully incorporated. 12: Return to the heat for 1 to 2 minutes but do not bring to a boil. 13: Remove your sauce from the stove and add in your cheeses, saving ½ cup of cheddar cheese for the top. 14: Add your cooked noodles to the cheese sauce and mix until everything is fully coated. 15: If you want a crispy top, add to a baking dish and top with saved cheddar cheese. 16: Broil on high until the top is golden and bubbly, keeping track to avoid overcooking. 17: Let it cool for 5 minutes and then serve.
