1: Preheat your oven to 375°F. 2: Peel and cube the sweet potatoes, then rinse in cool water. 3: In a medium bowl, combine sugar, brown sugar, cinnamon, nutmeg, kosher salt, and orange zest; mix with a spoon. 4: Grease a casserole dish with 1 tablespoon of butter. 5: Add sweet potatoes to the dish and top with 1/3 of the sugar mixture. 6: Add dollops of butter on top, cover with foil, and place in the oven. 7: In a saucepan, melt 3 tablespoons of butter, then add 1/3 of the sugar mixture, orange juice, vanilla extract, and bourbon. Cook on medium heat until the glaze reduces slightly and sugar dissolves. 8: In a separate bowl, mix cornstarch with water until dissolved, then add to the glaze mixture. 9: Bring the glaze to a simmer. 10: Once sweet potatoes are fork-tender, drizzle the glaze over them. 11: Sprinkle the last third of the sugar mixture on top and return to the oven for another 10 minutes. 12: Once candied, let cool slightly before serving.
