These stuffed jalapenos, known as Armadillo Eggs, are a delicious twist on a classic appetizer. Made with jalapenos filled with a savory cream cheese mixture, wrapped in sausage and bacon, they are perfect for parties and are sure to be a hit. Serve them with ranch dressing for extra flavor.

1: Preheat your oven to 350° F. 2: Prepare jalapenos by cutting off the end and removing seeds and ribs. 3: In a medium bowl, mix cream cheese, sour cream, cheddar cheese, and BBQ spices. 4: Place the cream cheese mixture into a Ziploc bag and pipe it into each jalapeno. 5: Take a scoop of sausage, flatten it in your hand, and wrap it around each stuffed jalapeno. 6: Wrap each jalapeno with bacon, using about 2 and 1/2 pieces per jalapeno. 7: Place parchment paper on a baking sheet, set a wire rack on top, and arrange the stuffed jalapenos on the rack. 8: Season each jalapeno with more BBQ seasoning and bake for 25 minutes at 350°F. 9: Once bacon starts to cook, increase oven temperature to 400°F. 10: When bacon is fully cooked, remove from oven and add BBQ glaze using a brush. 11: Bake for another 5 minutes to set the glaze. 12: Let cool for at least 5 minutes before cutting and serving.
