1: Sauté sliced white onion in unsalted butter and evoo on medium heat until translucent. 2: Add sliced baby portobello mushrooms and season with salt and pepper. 3: For the gravy, melt 2 tbsp of unsalted butter in a pan. 4: Stir in 4 tbsp of flour to form a roux. 5: Gradually add 2 cups of beef broth and mix until smooth. 6: Reserve 1/2 cup of pasta water and stir in 1/2 cup of heavy whipping cream. 7: Cook 1 lb of noodles in salted water until al dente, reserving 1 cup of pasta water. 8: Combine cooked noodles with the beef, onion, and gravy mixture. 9: Serve hot, garnished with grated parm/reggiano.
