This recipe for Double Dipped Crispy Fried Chicken results in thick, crispy skin with lots of flavor, perfect for sandwiches and a wonderful fried chicken night. The chicken is first marinated in a mixture of mustard and hot sauce, then double dipped in a seasoned flour mixture for extra crunch.

1: Take your cut and cleaned chicken and place it in a bowl. 2: Add mustard and hot sauce to your chicken, mix well and set aside for at least 30 min-1 hr. 3: Add Egg and milk to a shallow dish and whisk together. 4: Add Flour to a shallow bowl along with cornstarch and seasonings. Mix well. 5: After the chicken has marinated for at least 30 min, dip each piece into your flour, then egg mixture and then back to the flour. 6: Place your chicken on a wire rack and let it sit for about 15 min. 7: In a cast iron skillet, add your Crisco. Let that heat up to 355° F. 8: Once your oil is hot, add in your drumsticks and chicken thighs skin side down. 9: Cover with foil and seal the edges. 10: After about 7 minutes, flip your chicken and cook the other side. 11: Remove the foil once you flip your chicken to avoid creating moisture that makes the chicken skin soggy. 12: Use a thermometer to check the internal temperature of your thigh; once it reaches 165° F, you can remove your chicken. 13: If your chicken is getting too dark too fast, turn down the oil heat just a little bit. 14: Remove your chicken from the skillet and place on a wire rack to drain and season with more seasoning. Wait till it's cooled a little bit. 15: Serve it up and enjoy!
