1: Preheat your oven to 357°F. 2: Season your chicken with Jamaican jerk seasoning all over the skin front and back and underneath. 3: Use olive oil to help spread the seasoning evenly. Repeat with another coat of seasoning. 4: Add kosher salt to taste. 5: Drizzle lime juice all over the chicken and in the bottom of the pan. 6: Place four lime halves underneath the chicken: two under the thigh area and two under the breast area. 7: Cover the chicken with foil and place in the oven. Cook for 25 minutes. 8: After 25 minutes, drizzle melted butter over the top of the chicken and remove the foil. 9: Let the chicken finish cooking uncovered until the internal temperature reaches 165°F. 10: Remove the pan from the oven and baste the chicken with drippings.
