What you need

cup cornmeal

tsp salt

cup sugar

cup all purpose flour

tbsp baking powder

unsalted butter

egg

cup full fat milk
Instructions
1. Place your cast-iron skillet in the oven and preheat to 375°F. 2. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt. 3. Add eggs, milk, and evaporated milk to the dry ingredients and mix until smooth. 4. Once the oven is heated, melt the stick of butter in the hot skillet for 3–5 minutes until bubbly. 5. Pour the melted butter into the batter and mix until fully combined and smooth. 6. Pour the batter back into the hot skillet. 7. Bake uncovered for 20 minutes to brown the top, then cover with foil and continue baking until a toothpick comes out clean. 8. Let rest 5–10 minutes so it sets. 9. Drizzle with more butter and enjoy warm.
