bunch collard greens

Instructions
1: Build the broth: In a large stockpot, add the chopped onions, crushed garlic, water, all the seasonings, both bouillon bases, and the smoked turkey leg. 2: Simmer for flavor: Cover and let simmer over medium heat for 20–25 minutes to develop the broth. 3: Prep the greens: While the broth simmers, remove the thick stems from the collard greens. Roll the leaves, slice into ribbons, and wash thoroughly—at least three times—to remove grit. 4: Taste and adjust: After the broth has simmered, taste and adjust seasoning if needed—more salt, sugar, or spice to your liking. 5: Add the greens: Stir in the collard greens, cover, and simmer for about 1 hour, or until the greens are tender. 6: Finish and serve: Remove the turkey leg, shred the meat, and return it to the pot.
