What you need

tsp ground mustard

tsp paprika

tsp worcestershire sauce

lb macaroni noodles

cup plain flour

unsalted butter

cup sharp cheddar
cup pasta water

tsp kosher salt

cup mozzarella cheese

cup milk
Instructions
1. Cook the macaroni noodles in salted water and save ½ cup of the pasta water. Set noodles aside. 2. In a saucepan over medium heat, melt the butter until bubbly. 3. Add flour to the melted butter and whisk continuously. 4. Add seasonings and Worcestershire sauce while whisking the flour mixture. 5. Gradually add the milk in ½ cup increments, whisking in between each addition until the sauce is smooth. 6. Keep the heat at medium and whisk the egg yolk with a small amount of the warm milk mixture in a separate bowl until smooth. 7. Incorporate the yolk mixture back into the milk base, whisking fully. 8. Return the saucepan to the heat and add both types of cheese, stirring until fully melted. 9. Add reserved pasta water and stir until incorporated. 10. Mix the cooked noodles with the cheese sauce until fully coated. 11. For a crispy top, transfer the mixture to a baking dish, sprinkle with extra cheddar cheese, and broil on high until golden and bubbly. 12. Let cool for 5 minutes before serving.
