Instructions
1: Melt 2 tablespoons of butter and sauté onions until soft, then add garlic and cook until fragrant. Set aside once everything has sautéed. 2: In the same pot, add 4 tablespoons of butter and flour, whisking for 2 to 3 minutes continually. 3: Add the chicken/vegetable broth and all your seasonings along with half and half or cream. 4: Let the mixture cook on medium heat until it starts to thicken, stirring continuously to prevent burning (about 6 to 8 minutes). 5: Add sautéed onions, garlic, broccoli, and shredded carrots, continuing to cook until at your desired consistency. 6: If needed, add cornstarch whisked in well for a thicker soup. 7: Once the soup reaches your desired thickness, turn off the heat and add in the three cheeses. 8: Serve the soup once the cheese has melted, and add favorite toppings like bacon or more cheese.View original recipe
