What you need

Instructions
1: Season your chicken with salt and pepper. 2: Add a little canola oil to a skillet set to medium high heat and sear your chicken until golden brown. 3: Remove the chicken from heat and sear Andouille sausage until slightly crispy, then set the meat aside. 4: In a Dutch oven set to medium low heat, add canola oil, butter, and flour. 5: Continuously stir your roux with a whisk for about 15 minutes until it reaches a milk chocolate color. 6: Add your vegetables and seasonings to the roux and cook down for about 5 minutes. 7: Add the meat and liquids to the pot. 8: Optionally, add okra to help thicken the gumbo. 9: Bring your gumbo to a low boil, add bay leaves, cover, and simmer for about 1 hour. 10: Once thickened, remove from heat and stir in Gumbo Filé, then serve with rice and diced green onions.View original recipe
