1: Cut and clean your potatoes into wedges. 2: Drizzle olive oil, salt, and herb seasoning onto the potatoes. 3: Heat your skillet to medium high heat and add the potatoes. 4: Toss and cover the skillet for 10 minutes. 5: Toss the potatoes periodically. 6: Remove the potatoes from the skillet and set them aside. 7: Add bacon to the skillet and cook until crispy, then remove and set aside on a paper towel to drain. 8: To the same skillet, add sliced onions and toss until completely soft. 9: Once the onions and bacon are finished, add them to the tender potatoes and mix well. 10: Cook on the stove for another 5 to 10 minutes, adding more olive oil as needed if the skillet looks dry. 11: Once the potatoes are completely tender, transfer them to a bowl. 12: Finish with more herb seasoning or any other seasonings of your preference.View original recipe
